Summertime Pineapple Strawberry Juice

Summertime Pineapple Strawberry Juice recipe.

A classic summertime drink! Fresh pineapple chunks along with field-ripe strawberries, and a kiss of lemon. Perfect for children, and add a bit of rum or vodka, and your adult friends will be in a party mood.

1 large ripe pineapple (cubed)
1 lb strawberries
8-10 cups of water
1 lemon
3/4 cup sugar
1 tablespoon Mixed Essence
1 teaspoon Angostura bitters

Peel, core, and dice the pineapple. Wash, remove the stems, and cut the strawberries in 1/2.

Using a high-speed blender, puree the pineapple and strawberries with the water in two batches. Strain to remove the pulp and fibres.

Scoop off the foam at the top of the bowl and discard. Add all the other ingredients and stir well to combine.

I started with 1/2 cup of white sugar, but I did add between 3/4 and 1 cup in total.

Lime juice will easily replace the lemon juice if it’s all you have. Visit your local West Indian (Caribbean) grocers for the Mixed Essence. Vanilla extract could be used as a replacement. Serve chilled.
